Oatmeal Banana Muffins
Serves 12
Ingredients
2 ½ cups old-fashioned oats
2-3 large overripe bananas
4 large dates (or 6 smaller ones)
2 eggs
⅓ cup unsweetened applesauce
¾ cup almond milk
2 tsp vanilla
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp flax or chia seeds
Additional fruit and nuts as you wish
Instructions
  1. 1. Turn oven to 350 degrees.
  2. 2. Put the oats in a food processor and blend/pulse until they reach a rough, flour like consistency.
  3. 3. Throw in everything else! Blend, blend, blend. Should be smooth.
  4. 4. Add in approximately ½ c fruit, raisins or nuts. Mix with a wooden spoon if you want to incorporate it into the actual batter. Personally I wait until the end to add fruit and nuts and just sprinkle them on top.
  5. 5. Scoop into muffin tins, lined with muffin wrappers (makes 12 muffins).
  6. 6. Sprinkle muffin tops with a little oats or add the fruit and nuts now. Unsweetened coconut is also yummy. Press in a bit to make sure it sticks.
  7. 7. Bake at 350 for about 20 -23 minutes (a toothpick inserted in the center of a muffin should come out clean)
