Mediterranean Bean Salad


1 (15.5-ounces) can garbanzo beans, drained & rinsed

1 (15-ounce) can black beans, drained & rinsed

1 cup chopped grape tomatoes

1 large garlic clove, finely minced

1/2 cup chopped red onion

1/4 cup chopped fresh parsley

1/4 cup chopped fresh mint

1 1/2 tablespoon olive oil

Juice from one medium lemon

1/2 teaspoon kosher salt

Freshly ground black pepper


1. In a large bowl, combine beans, tomatoes, garlic, onion, parsley & mint

2. For the dressing, in a small bowl, whisk the olive oil & lemon juice until smooth and emulsified.

3. Pour dressing over the bens & veggies, add 1/2 teaspoon salt & black pepper to taste & carefully toss with large metal spoon. Allow to sit at room temperature for 30 minutes so flavours combine.


6 servings with serving size of 3/4 cup
