Spaghetti Squash Chicken Enchilada

3-4 chicken breasts 10 oz

2 1/2 cups spaghetti squash

1/2 can black beans

1 1/2 cups salsa

3/4 cup grated cheese

1 red pepper

1 yellow pepper

2 tsp chilli powder

This is real easy to make, cook the chicken first then shred it up with a fork. cook the squash as well, i like to just cut it in half saran wrap it and  throw it in the microwave for 5 minutes (or you can cook it in the oven). in a bowl add cooked chicken chilli powder, salsa, beans and cut up peppers. In a casserole dish put the squash down on the bottom then pour the chicken mix over top. Add cheese to top (i use the light stuff but it doesn’t melt as well as the regular cheese) then bake it for 20-25 minutes in oven at 350 Degrees.
