Morning Muffin Recipe

morning muffin recipe
2 cups Gluten free all purpose flour (cup for cup mix), I used one cup pamela’s and one cup cloud 9.
1/2 cup palm sugar (could substitute honey too) ( original recipe just says one cup sugar)
1/2 cup coconut sugar
1 Tbsp cinnamon
2 tsp baking powder
1/2 tsp salt
1/2 cup shredded unsweetened coconut
1/2 cup raisins or currents  (can use any dried fruit as long as it equals 1 1/2 cups)
1/2 cup dried cranberries
1/2 cup chopped dried apricots
2 cups grated carrots
2 grated apples
1/2 cup sesame seeds or sunflower seeds
1/2 cup pumpkin seeds
1/4 cup chia seeds
1/4 cup hemp seeds
3 eggs
2/3 cup olive oil or coconut oil
1 tsp vanilla
Gluten Free Morning Glory Muffins (Can be made with regular or wholewheat flour)   21 regular size muffins is what I got.   350* for 20-25 minutes.
Mix flour, sugar, cinnamon,baking powder, and salt in large bowl.
Add dried fruit, coconut, seeds,raisins, apple, and carrot. Stir to combine
In separate bowl, whisk eggs with oil and vanilla. Combine with dry ingredients and blend well. Very thick!
A splash of water can be added if too dry.
Fill regular size muffin tine heaping full.
Bake 350 for 20-25 minutes or golden brown on top.
Eat!  Enjoy!

Could change out 1/2 the sugar for applesauce too to lower calories as well and add more nutrition. Also might try to use protein powder next time for 1/3 or 1/4 of the flour.
