Roasted Chicken and Veggies

1 lb. Boneless, Skinless Chicken, cubed
3 c. Broccoli, chopped (approx. 200 g)
1 lg. Sweet Potato, cut into 1/4" cubes (approx. 500 g)
1/2 c. Red Onion, chopped (approx. 90 g)
2 cloves Garlic, minced
60 g Raisins
1/3 c. Olive Oil
1 tbsp. Coconut Oil
2 tsp. Italian Seasoning
1/4 tsp. Salt
1/4 tsp. Pepper
*Can add walnuts or top with goat/feta cheese once cooked
Preheat oven to 375 C.  Grease glass casserole dish with coconut oil. Add chopped chicken and season with salt and pepper.
In bowl, combine veggies, garlic, raisins, and nuts (If desired).  Add olive oil and herbs and toss.
Top chicken with veggie/herb mixture, bake covered for 35 min.  Uncover and cook an additional 15-20 min until chicken is cooked and sweet potatoes are tender.
