Recipe Challenge Entry from Meghan Simpson

1/2 cup chopped onion
1 egg
1 tbsp olive oil
1/2 cup panko bread crumbs
1/2 cup green onion
1/2 cup grated zucchini
1 tsp garlic
1 lb ground turkey
1/3 cup ketchup (no sugar added)
Makes 10 servings
1. Preheat oven to 400 F
2. Heat oil in pan on medium heat. Add green onions, onions, zucchini, and garlic. Saute for about 5 minutes. Place in bowl and let cool.
3. Add ground turkey, panko crumbs, egg, 1 tbsp ketchup, salt and black pepper to vegetable mixture and mix well. 
4. Coat loaf pan with cooking spray and place the mixture evenly into the pan. 
5. Evenly cover loaf with remaining ketchup. 
Back for about an hour (or until interntal temp is 160 F). Let stand for 5 minutes before you slice. 
Per slice 2.5 Fat, 4.5 Carbs, 16 Protein
